| 1/3 | cup | biscuit baking mix | |

| 1/4 | cup | grated Parmesan cheese | |
|  | |||
| 1/8 | teaspoon | freshly ground black pepper | |
|  | |||
| 2 | eggs, slightly beaten | ||
|  | |||
| 2 | cups | shredded zucchini* | |
|  | |||
| 2 | Tablespoons | butter | |
|  | |||
| Garnish with: | |||
| Fresh dill | |||
|  | |||
In a bowl, combine the biscuit mix, Parmesan cheese, pepper and eggs until blended.  Add the zucchini;  mix well.    
In a large skillet, melt butter.  Drop batter by 1/3 cupfuls into skillet;  press lightly to flatten.  Fry until golden brown, about 3 minutes on each side.   
Garnish with fresh dill.
*Yellow squash may substituted for the zucchini.
